Blueberry and Chocolate Chip Cookies

Not everyone likes mince pies, and the other traditional Christmas goodies. We always have two desserts for Christmas  lunch - one is chocolate and the other something fruity and fresh tasting - no Christmas puddings here, although I adore them! I make sure both desserts can be made in advance and that they will keep for a few days if not eaten straight away. More about them later!


However, for those who won't even look at a mince pie or a slice of fruit cake, I've baked some Blueberry and Chocolate Chip Cookies to sit alongside the Biscotti I made a few days ago. I used my favourite Dan Lepard recipe, changing it slightly to use vanilla extract instead of almond and spelt flour instead of wholemeal. This was the first time I've used spelt flour on it's own and it gave a really interesting flavour - hard to describe it really - nutty, perhaps? It certainly made the cookies an unusual colour too!

We always have a selection of desserts too, funny that we don't count the Christmas Pud on our list eitehr. Great looking cookies too, very thoughtful of you to cover all the bases for everyone ;0)

I've never baked with spelt flour - is it worth trying?

Foodycat - daughter brought a tub of Spelt flour home with her, so I thought I'd see what it was like. It's interesting, but I'd only recommend it if you were into 'healthy' and wholegrain eating. I don't think it added anything which improved these cookies.

They look just as good this time round! I know what you mean about not being able to describe the flavour of the spelt flour. I've only used it in bread rather than sweet baking, and I found that the bread I made with it had a sweeter crust - even when quite dark it doesn't seem to take on the bitterness I sometimes find with wholemeal loaves.

Foodycat - I would say it's worth trying, I much prefer the bread I make with wholemeal spelt flour as compared to regular wholemeal flour.

Haven't tried spelt. Sounds like one to try.
These cookies sound great Suelle. One to make next time I have some blueberries.

I was just thinking of making a batch of these too! I love the thought of making these with spelt! No christmas pud here either this year. Panic stations this morning..as we weren't sure who was coming but now we are going to be eight! but there is always time to say....
