Chocolate Chip, Fudge and Ginger Cookies

I'm falling into the stereotypical role of a mother - baking cookies to take to my son, when we deliver another load of his books this afternoon. I'm beginning to wonder if his room here will ever be emptied, and if you hear of a 3-storey block of flats collapsing somewhere in Cambridgeshire, you'll know it was the weight of his books wot did it!

This is another version of these lovely oil-based cookies from Cookie Madness. I used sunflower oil rather than olive oil, and instead of dark chocolate chunks and nuts, I used 30g each of dark chocolate chips, mini fudge pieces and finely chopped glacé ginger. I'm trusting it will be a fabulous flavour combination, because I'm not going to be tasting them. They certainly smelled good while baking!

Cookies which is low in saturated fats, are a winner in my eyes. The flavour combinations sounds delish x

How could you not have tried these, they look delicious and sound like a great flavour combination! I love anything with chocolate and ginger, will have to give these a try.

You ARE such a good mum! No wonder your kids never wanted to leave home! :)

Celia - leaving home is increasingly difficult for young folk in this country, even when they want to go. Average wages don't support mortgages, or even rents in some areas of the country, especially for single people.

The report back from CT was that the cookies were delicious!

They sound lovely, glad to hear CT liked them. Hopefully he is enjoying his independence (whilst not missing your baking too much!) - I feel lucky to have managed to leave home when I hear how much some struggle to do so. I think house prices in the North are not quite so prohibitive as further south. Best of luck to him.

They look fabulous. I've got two book cases positively overflowing with my cookbooks and we're on the third floor too - there is hope for your son yet ;0)
