Chocolate Custard Muffins

I've written about these before, as they are the only home-made muffins which my son really prefers to shop bought ones. I don't think that's anything to do with my baking skills - I think it's just that shop bought muffins are lighter and softer than those produced by any of the recipes I've tried. This is the first time I've made these since I started writing this blog, so it's a good opportunity to add a photo.


These are called chocolate custard muffins, not because they conceal a custard centre, but because they are made in a saucepan, with a base of cooked cocoa flavoured custard. The recipe, here, is another of Dan Lepard's marvellous creations, and it's very quick to make, once you have all the ingredients weighed and laid out ready to add to the pan.

There's not much else to say about them really, except they are light, but intensely rich and chocolatey in flavour!

Aren't they amazing!!! The texture is different to any other homemade muffin I've tried - I think it's the softness. You've reminded me of the chocolate orange ones in my freezer - must defrost and eat them soon - my brother got the rest of the batch and was a very happy bunny!

We love these muffins, always work perfectly and everyone loves them, my sis-in-law still doesn't believe they are home made! You are right in saying how light they are compared to 'normal' home made muffins. I often add white choc chips on top and serve with freshly made custard, sinfully good!

I made the Dan Lepard chocolate muffins a while back, and they were pretty good. However I've just made some muffins from the Hummingbird Bakery cookbook, and in my opinion they are far, far better. They are as chocolatey and rich as your brownies, if not more so! If you haven't got the book, suggest you check it out, some fab cakes, picked my copy up for a fiver and most of the recipes look scrumptious.

Hi, Sakkarin, good to see you here. I do have the Hummingbird Bakery Book, but haven't tried the chocolate muffin recipe yet.

The thing I like about these muffins is that the recipe works for me. Most muffin recipes do not give satisfactory results for my family, who expect light airy muffins.
